My wife has used a stun gun before to fend off an attack successfully .. but I wonder how most view the electronic weapons like stun guns and tasers vs. martial arts issue? Which offers more protection, in general?

In self defense, stun guns and martial arts are not exclusive.

If I hit someone with a stun gun, I'd be ready to follow up with kicks and punches in case it didn't put him down.

I'd then be ready to run.

angrysloth is correct.

If you plan to use a weapon, get trained in it, WELL. That means you'll be spending more than just the price of the weapon. To train realistically with a Taser, you'll expend several expensive cartridges; to train with pepper spray, you'll empty a couple canisters, and then have to acquire another fresh one for your everyday carry. Look into Demi Barbito's CSPT video series, and Kelly McCann's videos as well. They have sound teaching for the use of nonlethal weapons.

A recent study I read from Force Science (cop periodical) indicated that OC, stun guns, and tasers, generally result in lower risk and degree of injuries for both the user and the subject. However, cops still need to train in hands-on tactics, and use of weapons with high risk of injury (e.g. pistol, baton) because sometimes the situation calls for a different tactic.

Having a defense item is great. As far which being the best choice. I would say a stun gun for women.
Follow that up with defensive tactics for sure. I don't think you want to be caught fighting a man anyhow. But having the moves would not hurt if the stun gun only briefly gets him off you. So if he attacks you, defensive moves would help.
We don't recommend tasers unless you have been trained on that. Even with those, it could be faulty, the prongs may miss the attacker or not fully deploy inside the skin at all, etc...

Luck favors those who are prepared - in all aspects.

If you train with the taser, part of what you will learn is the way in which the darts move. One is pretty much straight, the other one goes a little downward on an angle, and that's the one that most often misses. The farther you are from the target, the more it spreads apart.

As far as the barbs not sticking in skin, they don't need to. They most often stick in clothing, and then they arc an inch or two into the person.

The discharge of a single taser cartridge will cost you a lot, like in the $100 neighbourhood, and thorough training with the taser will require you to discharge quite a few cartridges, placing your costs in the several-thousand-dollars range.
